PANCAKE TOWER WITH COCONUT YOGHURT AND FRESH FRUIT

You’re gonna love this Pancake Tower! The recipe is vegan, sugar-free, gluten-free and has a low fat content! So you can enjoy this pancake recipe as often as you want! The blob of coconut yoghurt with fresh strawberries gives the Pancake Tower a certain freshness and the maple syrup on top of the remaining sweetness!

Here’s the recipe:

Pancake Tower

Ingredients for 2 persons

  • 1 tsp baking powder
  • 1/2 cup rice flour
  • 3/4 cup ground oat flakes
  • 3 tbsp apple sauce
  • 1/2 cup + 1 tbsp oat milk
  • 2 tbsp maple syrup
  • 1 pinch of salt
  • 1 tbsp of oil
  • 2 tsp ground linseed

Topping

  • 1 cup coconut yoghurt
  • 5-7 fresh strawberries
  • Maple syrup to taste

Instructions

  • In your mixer, first mix both gluten-free flours and baking powder, then add all the remaining ingredients and blend to a creamy dough. The dough should have a viscous consistency.
  • Heat a non-stick pan without oil on medium heat (I used level 6 of 12 on my stove).
  • For pancakes of the same size: Use a medium-sized scoop as a portion or 1/2 cup per pancake.
  • Turn the pancakes over after about 5 minutes. The frying time also depends a little on the pan and the oven setting.
  • Place the finished pancakes one after the other on a tower and add on top of the coconut yoghurt and strawberries.
